Black Eyed Pea Soup

  • 6 CUPS VEGETABLE STOCK
  • 2 CUPS OF DRIED BLACK EYED PEAS
  • 2 CUPS CARROTS
  • 1 CUP GREEN PEPPER
  • 1 LARGE ONION

Finely dice the onion, carrots and pepper then saute until soft. Add the black eyed peas and vegetable stock, simmer for 1 hour and serve.
